Follow the instructions under menu Guide ->  Driver's Licence /en/guide/africa/mauritius/17733-driver-s-licence-in-mauritius.html

As for the dot point "An official certificate from your country's authorities confirming that your driver's license is still valid" at the above link:

Not sure which state in Australia you're from. I'm from Victoria and all I had to do was order my "driver history report or licence verification letter" from the VicRoads website (menu Licences -> Demerit points -> Check your demerit points). I think it cost me about $20 or $30 AUD and got sent to me by email in a matter of minutes.

Make sure to print out both the email you receive from VicRoads as well as the attestation letter to take with you.

I converted my UK driving licence to Mauritian one last year and the advise i was given on my first visit is as follows

They need to have an apostiled copy of your licence from the country of the licence.  The UK Consulate could not under law do this for me so I had to send it to the UK for apostile , that is the paper version.

The second point is that you need to follow their instructions on what documents you need carefully otherwise you will have to spend several visits to the office, When I was there a man was complaining that it was the third time he had brought his documents for them and still he was missing that apostile version of the licence

Apostilled copy of Licence? That is ridiculous. UK Driving licences are becoming digital now. All records are easily available to the authorities anyway. The UK consulate should be able to confirm the authenticity of the licence, and if you have had a 'police check' in the UK within the last 3-6 months it should tell you if you have any driving convictions surely.

BTW, is it essential to convert your licence? Can you not get a Mauritian driving licence anyway?

Best wishes.
