Merry Christmas!

I will be cooking a full English traditional Christmas dinner at home this year, although I have opted for roast duck rather than turkey. I will be roasting the duck whole rather than smashing it to pieces and serving it with razor sharp bone fragments in it though.

There will be chestnut stuffing, roast spuds and all the usual stuff, although I haven't yet been able to find any parsnips. I s'pose I will have to roast some carrots instead. I'll be making a sugar free (because with all the fruit involved in the recipe, sugar isn't necessary) Christmas cake again this year and have already set the dried fruit, dates, cranberries, raisins and cherries to soak in brandy.Last years cake went down very well with our Vietnamese friends and there have been numerous requests for it  again this year.

When I was in Hong Kong recently I had smoked roast duck which was very nice. I asked the chef what he had used to smoke the duck and he told me that it had been hot smoked with green tea. I might see if I can manage to smoke the duck without our smoke detectors going crazy.

For those who want to eat out this festive season, the May bar and restaurant (just round the corner from the Majestic hotel) does a very nice steak topped with Foi Gras.

Thank you very much for your interest in replying to my question. I will continue to look for a better Christmas dinner than I had last year - certainly must be an upgrade, at least.

We had Christmas dinner in the Caravel hotel a couple of years ago and that was pretty good.
