In case you are unable to find someone locally to show you around, it would best if you structure your day around the SultanAhmet area.

Blue Mosque, Hagia Sofia, the Palace and Yarebatan Sarnici (Basilica Cistern) would help you occupy your day thoroughly. I may even suggest skipping the palace that will take a full day in itself to explore.
